Claes Grännsjö

As the Gastronomic Development Coordinator at Torsåker gård, Claes works to ensure the culinary excellence of the meals developed within Torsåker gård’s meal concept. He is also part of the innovation team where he develops products from ingredients that consider sustainability, nutrition, and taste.

Claes has extensive experience in the restaurant industry, including working in the development teams at Ekstedt and Frantzén Group, launching groundbreaking food concepts and restaurants worldwide. He has managed the successful Stockholm restaurant Nook and earned a Michelin star as head chef at the restaurant Kock & Vin. Claes is a course instructor at the Swedish Restaurant Academy (Restaurangakademien).
